Wild Wedges 2 (8 inch) flour tortillas Non-stick cooking spray 1/3 cup shredded cheddar cheese 1/3 cup cooked, chopped chicken or turkey 1/4 cup green onion, thinly sliced 2 tablespoons mild thick and chunky salsa Heat large non-stick skillet over medium heat until hot. Spray one side of one flour tortilla with non-stick cooking spray. Place sprayed side down into skillet. Top with cheese, chicken, onions and salsa. Place remaining tortilla over mixture. Spray with non-stick cooking spray. Cook for 2 to 3 minutes per side, or until golden brown and cheese is melted. Cut into eight triangles. Variation For bean quesadillas, omit chicken. Spread 1/3 cup refried beans over tortillas.
