Roasted Chicken Casserole * 1 - 1/2 lbs of boneless chicken breasts * 1/2 cup of milk * 1 can of cream of chicken soup * 2 cups of shredded cheese * 1 pkg. of instant chicken stuffing mix and * 4 cups of frozen peas (or carrots, broccoli or corn) Make the stuffing mix as instructed on the package and set aside. Preheat the oven to 400 degrees. Cut the chicken breasts into one-inch cubes and in a 13x9 inch or similar sized baking dish, mix together the chicken breasts cubes and the frozen peas. Mix together the soup, milk and shredded cheese and then combine it with the chicken and veggies in the baking dish. Place the stuffing on top of the mixture and bake for 30 minutes.
