Yummy Sweet Potato Casserole 3 cups sweet potatoes, cooked, mashed 2 eggs, beaten 1 cup sugar 1/2 cup milk 1/2 stick margarine, melted 1/2 teaspoon vanilla 1/2 teaspoon salt Topping: 1 cup brown sugar 1/3 cup all-purpose flour 2 tablespoons margarine, melted 1 cup chopped nuts Preheat oven to 350 degrees. In bowl, combine sweet potatoes, eggs, sugar, milk, 1/2 stick margarine, vanilla and salt. Spoon into 9x13 inch casserole dish. In another bowl, combine brown sugar, flour, 2 tablespoons margarine and nuts. Pour over potatoes. Bake for 35 minutes.
