All To Myself Cheesecakes 12 chocolate sandwich cookies 2 (8 ounce) packages cream cheese, softened 1/2 cup sugar 1 teaspoon vanilla 2 eggs 1/2 cup semi-sweet chocolate chips 2 teaspoons shortening Preheat oven to 325. Line muffin pans with foil baking cups. Place 1 cookie into each muffin cup. In bowl, combine cream cheese, sugar and vanilla. Beat with mixer until smooth and fluffy. Beat in eggs just until well mixed. Spoon into baking cups. Crush remaining cookies. Sprinkle over cream cheese mixture. Bake for 25 minutes, or until set. Cool. In saucepan, combine chocolate chips and shortening. Melt over low heat, stirring frequently. Drizzle over baked cheesecakes. Cover. Chill.
