Cheesecake Cups 6 vanilla wafers 1 (8 ounce) package cream cheese, softened 1/4 cup sugar 1 teaspoon vanilla 1 large egg Preheat oven to 325. Line 6 muffin cups with fluted foil cupcake liners. Place 1 vanilla wafer into each cup. In bowl, combine cream cheese, sugar and vanilla. Beat with mixer until smooth and fluffy. Beat in egg until well mixed. Divide cream cheese mixture equally among lined cups. Bake for 25 minutes, or until just set. Chill for 15 minutes, or until ready to serve.
