Creme De Menthe Cheesecake
2 (8 ounce) packages cream cheese
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
4 teaspoons green creme de menthe
1 (9 inch) ready made chocolate pie crust
Preheat oven to 350. In bowl, combine cream cheese, sugar and vanilla. Beat with mixer on medium until well blended. Add eggs, mix until blended. Blend in creme de menthe. Pour into crust. Bake for 40 minutes, or until center is almost set. Cool. Chill for 3 hours.
