Brown Sugar Oatmeal Cookies 1 3/4 cups firmly packed brown sugar 1/2 cup shortening 1 stick butter, softened 1 teaspoon vanilla 2 eggs 1 cup all-purpose flour 1 cup whole wheat flour 1 teaspoon baking powder 3 cups old-fashioned rolled oats Preheat oven to 350. In bowl, combine brown sugar, shortening and butter. Beat with mixer until light and fluffy. Add vanilla and eggs, blend well. Add flour, whole wheat flour and baking powder, mix well. Stir in oats. Drop by heaping tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 10 to 14 minutes, or until light golden brown. Cool on pan for 1 minute. remove from pans. Makes 2 1/2 dozen.
