Butter Mint Delights 1 cup butter mints 2 sticks butter, softened 2 cups all-purpose flour 1 tablespoon sugar Line 9 inch square pan with waxed paper. Grind butter mints to a medium fine texture in blender. Knead butter into flour until well blended. Add ground mints. Continue kneading until dough is of a soft but solid consistency. Pat dough evenly into prepared pan. Chill for 1 hour. Sprinkle surface of pastry with sugar. Cut into small 1 inch squares. Lift waxed paper with cookies intact from pan. Place 1 inch apart onto ungreased cookie sheet. Place in freezer for 30 minutes. Preheat oven to 300. Bake frozen cookies for 16 to 18 minutes. Butter Mint Delights should not brown at all. Cool on wire rack.
