Candy Cane Cookies 2 sticks butter, softened 1 cup powdered sugar 1 egg 1/2 teaspoon peppermint extract 1/2 teaspoon vanilla 2 1/2 cups all-purpose flour 1/4 teaspoon salt 1 cup finely crushed candy canes 3 tablespoons sugar Coat cookie sheets with non-stick cooking spray. In bowl, combine butter and powdered sugar. Beat with mixer until light and fluffy. Add egg, peppermint extract and vanilla, beat well until blended. Gradually add flour and salt, blend well. Cover bowl with plastic wrap. Chill for 1 hour. In another bowl, combine crushed candy canes and sugar. Shape chilled dough into 1 1/2 inch balls. Roll in candy cane mixture coating completely. Place 2 inches apart onto cookie sheets. Preheat oven to 375. Bake for 10 to 12 minutes, or until golden brown. Immediately remove to wire rack to cool Makes 3 dozen.
