Crockpot Mexican Fiesta 1 (12 to 15 ounce) package white corn tortilla chips 1 pound lean ground beef 1 (16 ounce) can ranch style beans, undrained 3 cups grated cheddar cheese 1 (10.5 ounce) can cream of mushroom soup 1 (10.5 ounce) can cream of chicken soup 1 (10 ounce) can mild Ro-tel 2 teaspoons chili powder 1/2 cup chopped onion Spray crockpot with non-stick cooking spray. Cover the bottom with slightly crushed tortilla chips. In bowl, combine soups, rotel, chili powder and onion, blend well with a whisk. In skillet, brown beef. Add beans, mix well. Layer half of beef mixture over chips, then half of soup mixture, ending with half of cheese. Repeat layers once more beginning with chips and ending with cheese. Cover. Cook on high for 3 hours.
