Willie’s Jambalaya 1 Pot List items you need 1 pound boneless chicken breast or thighs 1 smoked turkey or pork sausage sliced in to quarter shaped circles third meat is optional 1 pound diced ham or extra large cooked shrimp 1 garlic 3 bell peppers (red, green, and yellow) 1 medium onion 1 28 oz can, diced tomatoes 1 large 32 oz) can, chicken broth 6 bay leaves 3 cups rice (white or brown, brown rice cooks longer) 1/2 cup all purpose flour 2 cups jambalaya juices (get this when jambalaya is 75% done) Seasonings Enough season in to season the pot. 1 bottle, liquid smoke (a little bit goes a long way) 1/2 tablespoon, oil (enough to cover the bottom of the pan) ˝ table spoon, Cajun seasoning ˝ teaspoon, cayenne pepper 1 teaspoon, crushed red pepper ˝ tea spoon, black pepper 1 teaspoon, salt Pre-cooking instructions Step 1 Pill Shrimp Chop chicken in to bite size pieces Slice sausage in to quarter shaped circles Chop 5 cloves, garlic Chop bell pepper Chop onion cooking instructions Step 2 Medium high heat, put oil and liquid smoke (a little bit goes a long way about 3 shakes) in a large pot Put chicken in the pot first, (takes the longest to cook about 5 to 10 minutes) While chicken is cooking, put sausage and ham in the pot Season meat with half the seasonings (cook for about 10 minute’s together cover with top) Put Bell peppers, onions, bay leaves, diced tomatoes (drain in sink tomato juice from can), and garlic in the pot While meat and vegetables are cooking, season the food again.(stir food so it will not stick to the bottom of the pot) Put ˝ can chicken broth in to pot ( make sure food is covered with the broth) and cook Step 3 Make soup thicker Take 2 cups of jambalaya juice and 1/2 cup of all purpose flour in a bowl and mix well, ( no lumps in the mix) put back in pot bring pot to a boil. When the soup is thicker, it is done. Step 4 Optional You can put rice in the pot and add a cup of broth. The rice will make the soup thicker. (you can skip step 3) or you can cook the rice separate the regular way follow instructions on package. Step 5 Optional While soup is getting thicker put shrimp in pot. (about 2 to 4 minutes cooking time) turn off pot while shrimp is cooking. Pot is hot enough to cook the shrimp. With a side salad, a bowl of jambalaya and a nice dinner roll, this is dinner. Enjoy
