Almost Guiltless Cheese Cupcakes 1 (18.25 ounce) box yellow cake mix 1/4 cup vegetable oil 2 (8 ounce) packages cream cheese 3 eggs 3/4 cup sugar 1 teaspoon vanilla 1 1/2 cups sour cream 1/2 cup sugar 1 (21 ounce) can pie filling, any flavor Preheat oven to 350. In bowl, combine cake mix and oil until crumbly. Divide between 24 paper lined cups in muffin pan. Press gently with bottom of glass. In another bowl, combine cream cheese, eggs, 3/4 cup sugar and vanilla. Beat with mixer until smooth. Divide evenly into cupcake papers. Bake for 20 minutes, or until set. In another bowl, combine sour cream and 1/2 cup sugar. Spoon over cheesecakes. Bake for 5 minutes. Cool. Spoon pie filling over each.
