Applesauce Cupcakes 1 stick margarine 1 egg 1/4 cup sugar 1 1/2 cups sifted all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon ground cinnamon 1 1/2 teaspoons ground nutmeg 1 cup unsweetened applesauce 1 teaspoon vanilla 1/4 cup chopped walnuts Preheat oven to 375. In bowl, beat margarine with mixer until fluffy. In another bowl, combine eggs and sugar. Beat with mixer until combined. Add to margarine, blend. In another bowl, sift together dry ingredients. Add to margarine mixture alternately with applesauce, beating well after each addition. Stir in vanilla and nuts. Spoon into 12 cup muffin tin that has been coated with non-stick cooking spray. Bake for 15 to 20 minutes.
