Super-Easy Cupcakes
3 cups biscuit baking mix
1 cup sugar
1 cup milk
1/4 cup shortening
2 teaspoons vanilla
2 eggs
Preheat oven to 375. Line muffin tin with paper liners or spray with non-stick cooking spray. In bowl, combine all ingredients. Beat with mixer on low for 30 seconds. Beat on medium for 4 minutes. Fill muffin cups half full. Bake for 15 minutes, or until toothpick inserted into centers comes out clean. Immediately remove from pan. Cool. Frost as desired.
