Bailey's Truffle Fudge 5 1/2 cups semi-sweet chocolate chips, divided 1/2 stick plus 2 tablespoons butter, divided 3 cups Powdered sugar 1 1/4 cups Bailey's Irish Cream, divided 1/2 cup chopped nuts, optional 1/4 cup Bailey's Irish Cream Coat 8 inch square pan with non-stick cooking spray. In bowl, combine powdered sugar and 1 cup Irish Cream, set aside. In saucepan, combine 4 cups chocolate chips and 1/2 stick butter. Melt until soft enough to stir smooth. Add to Powdered sugar mixture, stir until smooth. Add nuts, mix well. Press into prepared pan. Lay a sheet of plastic wrap on top, gently press to smooth fudge. In saucepan, melt 1 1/2 cups chocolate chips until smooth. Remove from heat. With fork, beat in 2 tablespoons butter and 1/4 cup Irish Cream until smooth. Spread over fudge. If a very smooth top is desired, use piece of plastic as done on fudge. Chill for 1 to 2 hours, or until firm.
