Mississippi Mud Pie 19 cream-filled chocolate sandwich cookies, finely crushed 1/2 stick butter, melted 1/2 gallon chocolate or coffee ice cream 1 cup heavy cream, divided 1 cup semi-sweet chocolate chips 1/4 teaspoon ground cinnamon In bowl, using fork, combine crushed cookies and butter. Set aside 1 tablespoon crumb mixture. Press remaining mixture into bottom and up sides of 9 inch pie plate. Freeze for 10 minutes. Scoop ice cream into balls and place into crust. Using rubber spatula, smooth top of ice cream. Sprinkle with remaining crumbs. Return to freezer. In bowl, beat 1/2 cup heavy cream with mixer until stiff peaks form. Using pastry bag fitted with star tube, pipe cream around edge of pie. Pipe any remaining cream onto center of pie. Freeze for 15 to 20 minutes, or until ready to serve. In saucepan, combine chocolate chips, remaining 1/2 cup cream and cinnamon. Cook over moderate heat, stirring constantly, until chocolate melts and mixture is smooth and bubbly. Pour mixture into small pitcher. Cut pie into wedges. Serve, passing the chocolate sauce.
