Recipe for Southern Chess Pie (Makes 2 Nine inch, deep dish pies) 3 cups sugar 8 eggs 3 tablespoons cream 2 tablespoons of cornmeal dash of salt 2 teaspoons vanilla flavoring 1 teaspoon apple cider vinegar 1 stick of butter 2 unbaked, 9" deep dish pie shells preheat your oven to 325 degrees Put all ingredients into a blender, blend for approximately 2 minutes. Pour into the unbaked pie shells. Cook at 325 degrees for about 45 minutes, or until the custard sets. I usually take a sharp knife and stick it into the custard. If it comes out clean, the custard is set. If you want the top of your pie to be smooth, set the oven at 425 degrees and turn it down to 325 after the pies have been in the oven for 15 minutes.
